On the table in Courmayeur are dishes inspired by regional and local cuisine such as Valdaostana en carrozza with soft-boiled egg on savoy cabbage cream, Roman-style gnocchi Milano-Courmayeur, which is saffron semolina gnocchi with carbonade (beef braised in red wine and spices), Game braised in buckwheat polenta and chocolate Brazil, and Salmon trout in broth with pane guttiau.

The Drink Club toasts to winter with its latest creation, the Monte Bianco cocktail with blue Cachaca, Amaro Ebolebo, white Adriatico, sugar syrup, lime juice, egg white, and black pepper spray.
